Baked Cinnamon Bananas & Salted Caramel Fudge Sauce

I know I know, salted caramel again you say! I can't help it because it goes with pretty much everything I eat these days. However, I pinky promise you that this will be the last salted caramel inspired recipe I share (let's say for a month?) so we can give our hips and stomachs some breathing space.

Do we have time for a confession? Ok, I was actually going through one of my "detox" weeks and opened the pantry to snack on some walnuts when I saw a packet of brown sugar, sea salt flakes and half a tub of golden syrup staring straight at me and screaming out "pick me pick me!". Brown sugar and salt flakes I can ignore, but golden syrup? C'mon people, get your priorities right. Repeat after me - we never say no to golden syrup. Never. Ever!

My justification for this treat? Bananas are healthy right? *wink wink*


Ingredients //

75g unsalted butter, chopped
1/2 cup brown sugar
1/4 golden syrup
1/2 cup cream
1 tsp of sea salt flakes
4 ripe bananas
1 tbsp of cinnamon powder
1/4 cup walnuts, chopped 


 Method //

Peel and slice bananas in half lengthways. Place them on a lined baking paper and sprinkle cinnamon powder on top. Bake in oven at 160 degrees for 10-15 minutes until bananas are softened. Once baked, take out and cool for a few minutes.


To make the salted caramel sauce, combine butter, sugar, golden syrup and cream in a small saucepan. Stir over medium heat until the butter melts and mixture is smooth. Reduce heat to medium - low and simmer, stirring occasionally for about 5 minutes. Stir in salt and mix thoroughly. Remove from heat and cool for 10 minutes.

Arrange slices of baked bananas in serving bowls. Drizzle with warm salted caramel fudge sauce and sprinkle with walnuts to serve.


If you're not a fan of bananas, you can always substitute the fruit! Perhaps baked pear?

  2. This looks delicious! I'm not a huge fan of banana but I'll definitely give it a go with some pears... I saw them for cheap at Coles the other day.
