Nutella Swirl Banana Bread

Last weekend, I had planned to make my usual banana bread for the week when I realised that I didn't buy any dark chocolate earlier at the supermarket (yes I put a smidge of dark chocolate bits in my banana bread - please don't judge me). After humph-ing and puffing around the kitchen in annoyance, I heard my husband's voice in the next room casually say "there's a tub of Nutella in the pantry so why don't you put that in there?". Genius!

I wasn't sure how it was going to turn out but when THIS came out of the oven, I knew it was the beginning of a lifelong love affair.


Ingredients //
2 cups flour
2 tsp baking powder
1 cup brown sugar 
125g softened butter
4 ripe bananas
2 eggs
1/4 cup of milk
1 tsp vanilla essence
1/4 cup of Nutella

Method //
In a bowl, mash the bananas with a potato masher or a fork until it's runny but still have small lumps. Add all the wet ingredients - softened butter, eggs, milk and vanilla. Using a mixer and paddle attachment, mix together until it is well combined. Add all the dry ingredients - flour, baking powder and sugar. Stir with a wooden spoon until you can no longer see the dry ingredients. Set aside.

Place the Nutella in a bowl and microwave for about 25 seconds to soften it. Once it is in a thick runny consistency, drizzle 2/3 of the cup into the bowl of banana mixture. 

Using a spatula, gently fold the Nutella into the banana batter and be careful not to over-mix so that you can see the swirls once it is baked. Pour mixture into a cake tin and drizzle the rest of the Nutella on the top. Place in the oven to bake for 50 - 60 minutes (at 180 degrees) and test until a skewer comes out clean.

Once it cools down a little, cut yourself a slice while it is warm and the Nutella is gooey. If you're a hardcore Nutella fan, you could always save some melted Nutella and drizzle it on top of your slice. Perhaps you can also serve with a cup of this?

  2. Dude you're killing me!!! All these chocolatey goodness on your blog... is not good for my waistline hahaha! Although I made that mug cake without sugar and it was darn good still. Can't believe how much rice malt syrup sweetens up the whole thing :)
