60 Second Chocolate Mug-Cake (sugar free!)

Farewell forever to 2 naps and a very uninvited hello to 1 nap that never stretches long enough! When I say naps, I mean naps for Scarlet and not for me of course! (I wish).

By the time this sweet, precious nap time comes around, I CRASH. Literally guys, I am just exhausted. There is no way I want to get crafting or start on any of the projects I keep telling myself I'll start 'soon'. All I want to do is sit on the couch, turn on a DVD and stare at the TV aimlessly with this little pot of gold in my hands.


Ingredients //

1 egg
4 tablespoons of flour
1 1/2 tablespoons of rice malt syrup*
3 tablespoons of cocoa powder
3 tablespoons of skim milk 
1/2 tablespoon of coconut oil**
1/4 teaspoon of salt
1/4 teaspoon of baking powder

*or 3 tablespoons of sugar if you're not watching your figure!
**or just regular olive oil will do just fine.

Method //

Mix all the ingredients in one bowl and pour the batter into a coffee mug or a bowl.

Place it in the microwave for 50 seconds to 1 minute & 15 seconds. The reason why I say this is because the consistency of the cake should be gooey and the time to cook will vary depending on the microwave you use. I recommend starting with 50 seconds then take out to check the consistency. If you're happy with it, sweet! If not, place back in the microwave for a further few seconds.

Hint - if you want to be a bit naughty and not caring so much about the no sugar thing, buy a store bought jar of salted caramel (or make your own batch), microwave it for 20 seconds on high & pour it over the top of the cake.

  3. I literally made this as soon as I got home from work. Amazinggggggg!!!!! I was naughty & put the sugar though. I'm not a big fan of rice malt syrup, has a strange after taste for me!
