Gooey Brownie Cookies with Salted Peanut Butter Filling

First things first, let's get this straight - I'm not much of a baker. Actually, I'm pretty hopeless! Ask my husband and he'll agree that we've both seen way too many disasters when it comes to my baking/dessert making attempts. Cakes are never completely cooked through, cookies never shaped quite right, meringue ends up all sloppy and it usually ends with me chucking a bit of a hissy fit like 5 year olds do in the kitchen.

So when I knew I had to make cookies for this swap, my immediate thought was "Dang, I suck at cookies. Wish it was a brownie swap instead..." - BINGO. Why hello brownie cookies! Then I thought, I can't just make brownie cookies on its own and that even cookies need some sort of a friend, so I looked in my pantry for some inspiration and found 5 tubs of peanut butter sitting staring at me. The rest as they say, is history.  

It took me a few trials to tweak this recipe right but I'm pretty stoked (and proud) about how the cookies have turned out and how easy it is to make. Perhaps you guys can experiment with different fillings and share with me?



Ingredients //
(makes approximately 14 cookies)

Cookie:
350 grams dark chocolate
40 grams of butter
2 eggs
2/3 cup of caster sugar
1 teaspoon of vanilla extract
1/4 cup of self raising flour
1/4 teaspoon of baking powder

Method //
1.  Preheat oven to 180C.
2.  Melt 200g of the dark chocolate and the butter in a small saucepan over low heat and stir until melted and smooth. Set aside.
3.  Place the eggs, sugar and vanilla in a bowl of an electric mixer and whisk for 10 minutes until the mixture is pale and creamy.
4.  Stir through the flour, baking powder, chocolate mixture and remaining chocolate, and allow to stand for 10 minutes.
5.  Once mixture is set, spoon tablespoonfuls of the mixture onto a baking tray lined with baking paper.
6. Bake for 10 minutes or until puffed or cracked, then allow to stand for half an hour before sandwiching with filling.


Salted peanut butter filling:
1 cup of icing sugar
1 cup of smooth peanut butter
80 grams of butter
1 teaspoon of vanilla extract
1/3 cup of pouring cream
a pinch of sea salt (according to taste)

Method //
1.  Place sugar, peanut butter and vanilla in an electric mixer and beat for 5 minutes until light and fluffy. Add the pinch of salt (to your liking) and beat for another minute.
2.  Add the cream and beat for a further 2 minutes until mixture is smooth and creamy.

  7. I made this on the weekend and the whole household LOVED it! My husband begged for more as did our boys, although we are all in a bit of a sugar coma now and don't think I'll be making these again anytime soon!
