Easy (& healthy!) Coconut & Berries Popsicles

I'm trying my absolute best to feed my Scarlet all healthy things. We have our days though - sometimes (when she's chucking a tantrum, screeching, yelling, yelping, growling, crying, sooking etc) it's just easier to give in so you can shut them up and return all order of peace and quiet in the house. So, this is an easy and healthy recipe that I trialled to replace "treats" in our household. Needless to say, little miss 1 LOVED the taste and I think I will do more of these type of recipes to "trick" her into thinking they're actually "sweets" - HA!

COCONUT & BERRIES POPSICLES

Ingredients // 
(makes 6 small popsicles)

Fresh blueberries, raspberries and mulberries (or frozen ones)
400ml of coconut milk
1 teaspoon of rice malt syrup (I only put a small amount because coconut milk is sweet enough already on its own)

You'll also need: popsicle molds or tubs

Method //
1.  Place berries into popsicle molds.
2. Mix together coconut milk and 1 teaspoon of rice malt syrup in a blender.
3.  Pour over milk into molds and set in freezer for a good few hours.

Hint - you can get cute little popsicle molds from Kmart ($2 for a 6 pack).  Also, don't forget to be creative with what fruits you put in there! Think summery fruits - mangoes, peaches, rock melon, strawberries...

  3. These look so gorgeous and yummy - I think I will have to get to kmart for those molds! Also, how good is rice malt syrup?! I've just discovered it in the last couple of weeks.

    1. I LOVE rice malt syrup! I've only just recently discovered it too and putting them in things instead of sugar. So good!
