EASY-PEASY SALSA VERDE
2 cloves of garlic, peeled
2 tablespoons of capers
2 pickled gherkins, sliced into small pieces
2 large handfuls of flat-leaf parsley
1 bunch of fresh basil
1 tablespoon of Dijon mustard
8 tablespoons of extra virgin olive oil
3 tablespoons of red wine vinegar
A few teaspoons of freshly squeezed lemon juice
freshly ground black pepper
1. Loosely chop the garlic, capers, gherkins, and herbs and put them in a food processor.
2. Add the mustard, vinegar and olive oil.
3. Process until it forms a thick liquid substance.
4. Taste, and add salt and ground pepper according to your liking.
Pour over / serve with grilled or roasted meat and fish. Gorgeous!
